We like our grilling the way we like our wine – sophisticated. In our part of the world, we have our own techniques that make Napa grilling a cuisine all its own. Try these tips, and bring a taste of Napa Valley to your next backyard barbecue.
Oak Chips
We use grapevine shoots or wine barrel staves to add a smoky flavor to grilled meats. For that Napa-style smokiness, soak oak chips in water for at least two hours, then place them in a foil pouch. Pierce the foil with a fork, and place the pouch on your grill, before adding the meat.

Cabernet Sauce
It's no secret we love Cabernet Sauvignon. We use Louis M. Martini Napa Valley Cabernet to create a deliciously rich sauce and marinade. Whip up this recipe for your next grilled steak.
In a medium sized bowl, whisk together 1 ½ cups of barbecue sauce, 1 cup of Louis M. Martini Napa Valley Cabernet Sauvignon, Kosher salt and freshly ground pepper. On the stovetop, bring the mixture to a boil until it thickens. Marinate steak in this sauce for two hours prior to grilling, or serve it on the side as a dipping sauce.

Olive Oil
Many wineries around the Napa Valley produce olive oil from the olive trees that grow alongside their grapevines. Brush your favorite olive oil onto your grill grates to prevent sticking, or use it in a steak marinade.

Grilled Corn
Corn is a popular side dish in Napa Valley, and it's a crowd-pleaser when grilled to perfection. Peel back the husks and remove the corn silk, then soak the corn in water for one hour. Squeeze the excess water from the husks, then add butter, salt and your favorite seasonings to the inside of the husks. Wrap string around the husks and grill for 15 to 20 minutes over medium heat, rotating frequently.

Grilled Garlic
Grilled Garlic is a great side dish for Napa-style barbecue. Cut one end off a clove of garlic, add your favorite olive oil to the open end, then cover it with tinfoil, and grill until the cloves are caramelized and soft to the touch.

Grilled Pan Bread
For an extra touch of Napa sophistication, make your favorite bread recipe and place it in a cast iron skillet. Grill the bread on the top grill rack (away from direct heat) for 20 to 30 minutes until golden brown.
